Pumpkin Oat Scones

These are my favorite things to make, ever. Simple and oaty, a bit sweet but not too much. Like lumps of biscuity goodness. This is a good recipe for those of you who can't stand donut/danish sweetness in the morning.

1 1/2 cups all-purpose flour
2 cups rolled oats
1/4 cup white sugar
4 teaspoons baking powder
1/2 teaspoon salt
1/2 cup canned pumpkin
1 egg, beaten
1/2 cup butter, melted

1. Preheat the oven to 425 degrees F (220 degrees C). Lightly grease a baking sheet.

2. In a large bowl, mix the flour, oats, sugar, baking powder, and salt. Make a well in the center.

3. In a small bowl, beat egg until frothy, and stir in melted butter and milk. Pour into the well, and mix to create a soft dough. Mix in the pumpkin as well.

4. Pat dough into small balls, about 2 inches across (or as big as you want your scones).

5. Bake 15 minutes until risen and browned.

Notes:

You can make any type of scone you want, I've added peanuts, chocolate chips, green chile flakes, and pecans in various endeavors. If you use a dry ingredient for flavor, though, add in 1/3 cup of milk to the egg and butter mixture. I left it out because the pumpkin conistency seemed to do just fine without milk.
